This is one of my favorite and the most easy dish to make in the instant pot. This Indian recipe comes out straight from my grandma's kitchen and I love it!

INGREDIENTS
1 tsp Ginger Garlic Paste
4 tbsp Ghee
Handful of Cashews
2 Cinnamon Sticks (2 inches)
5 Pepper Balls
1 tbsp Cumin Seeds
1 cup Indian basmati rice (any long grain rice byt basmati is preferred)
2 Star anise
2 Black cardamom
2 Bay leaves
1-2 Onions thinly sliced
1.5 cups Water
METHOD
Soak the rice in a bowl for 30 mins.
Drain the water after washing the rice.
In an instant pot, turn on the sauté mode.
Add ghee and cashews, fry till they turn slightly brown.
Put it aside.
In the same pot add the remaining ghee and spices. fry the spices for 30 seconds.
Then add onions thinly sliced , fry till they become golden brown.
Add the ginger garlic paste and fry till the raw smell goes away.
Now, add the soaked rice, 1.5 cups of water, cashew and salt.
Put the cooking time on manual mode/pressure cook mode for 5 mins in the instant pot.
Open it after all the pressure gets released naturally.
Amazing cashew rice is done in 10-15 mins!
